Winemaker's Notes
I cut off the irrigation weeks before harvest. We
had selected specific vineyard rows off the Estate
to produce this exotic dessert wine. The shriveled
fruit that was chosen for the Late Harvest program
wasn't the most attractive fruit, as it saw some drizzle,
mold and experienced extreme dehydration. Once fermentation
was underway, I tasted the fermenting must twice daily
waiting for just the right balance of alcohol, flavor
components and residual sugar. When I felt the wine
was in balance, I arrested the fermentation via pressing
off, dropping the wine temperature to 30 degrees and
racking immediately off its lees. Other than Assmanhausen
yeast and yeast nutrients, there was nothing added
to this wine.
Tasting Notes
This unique depiction of the 2007 growing season
is jam packed with spicy dark cherry aromatics followed
up with a medium mouth feel and a lingering finish
of white pepper and juicy cherries and raspberries.
Our 2007 Late Harvest showcases perfect balance between
RRV fruit, viscosity (RS) and natural acidity thus
allowing 5-8 years of cellaring.
Proprietor's Notes
This wine was made from a particularly sunny part
of the Estate block. Left for weeks longer on the
vine with only sips of water, this wine represents
the epitome of our Estate Zinfandel… Bright juicy
perfumy red-berried fruit.
