Grower & Winemaker's Notes

This artisan-production of 120 cases of 100% Cabernet Sauvigion is our continued attempt to allow vineyard-specific terroir to shine. This fruit was most likely the first Cab block picked during the 2003 Vintage. At 23.8, the fruit arrived at our crush pad with only very slight dimpling- Once the must was in a 2-ton open-top tank, it was inoculated with a classic Bordeaux yeast and allowed to ferment dry in 13 days. During fermentation, the cap was managed delicately with a morning punchdown and evening pumpover so as to not over extract. The must was lightly pressed to tank for a gross lees settling and racked the following day to barrel. The Radaux-oaking was very carefully monitored to ensure balanced complimentation of the natural fruit flavors and oak profiles.

Tasting Notes

This easy drinking yet elegant-style Cab is a rarity in today’s California Cabernet Landscape. The herbaceous aromas, the soft, fuzzy tannins, balanced acidity and judicious use of oak all come together to make a tasty treat at your table. 

Like all things in life, it’s all about balance…

4/5/09: Tasting Update; "So it's Sunday and David and I worked the tasting room as Naomi was sick . Anthony came in for the afternoon to help out.  After 5 hours solid Sunday tasters, we decided it would be a great idea to pull the cork on our inaugural vintage Cabernet Sauvigion.  What a great idea!   After the initial splash around the bar, I thought to myself, "with a mere 22 bottles left, I better cork it and quietly put it away for later evaluation."   (1.5 hours later...)  Overall:  With over four years in the bottle, this wine was aaaawsome.   Still light on its feet, this wine was being carried not by the slow swell of tannin, but by the lively acids.  There's a slight browning around the glass's edge, but the core of the wine was ever present.  Aromas of coco powder and dusty herbs greeted me as I approached.  The mouthfeel has softened since it last met my taste buds... There's this zing of cinnamon that checks in right as I (gulp) swallow leading eventually to warm creamy cafe au lait loirtering around on the finish. Give it another two years before it begins to plateau" "  21 bottles remain   RP
