Grower & Winemaker's Notes
This fruit was most likely the first Cab block picked during the 2004 Vintage. At 23.8, the fruit arrived at our crush pad with only very slight dimpling- Once the must was in 3/4 ton open top t-bins, it was inoculated with a classic Bordeaux yeast and allowed to ferment dry in 12 days. During fermentation, the cap was managed delicately with a morning punchdown and evening pumpover so as to not over extract. The must was lightly pressed to tank for a gross lees settling and racked the following day to barrel. The Radaux-oaking was very carefully monitored to ensure the natural fruit flavors not be masked by wood.
Tasting Notes
The herbaceous aromas, the soft, fuzzy tannins, balanced acidity and judicious use of oak all come together to make a nice tasting wine at your dinner table.
