Grower & Winemaker's Notes

This artisan production of 150 cases was our continued attempt to allow vineyard-specific terroir to shine through very small lots. This fruit was most likely the first Cab picked during the 2005 Vintage. At 23.7 brix, the fruit arrived at our crush pad with only very slight dimpling. Once the must was in t-bins it was inoculated with a classic Bordeaux yeast and allowed to ferment dry in 16 days. During fermentation, the cap was managed delicately with a morning punchdown, afternoon hand-punch down and evening pumpover so as to not over extract tannin. The must was lightly pressed to tank for a gross lees settling and racked the following day to barrel. The Radaux-oaking was very carefully monitored to ensure the natural fruit flavors to shine.

Tasting Notes

With more structure than years past, our single vineyard Cab displays ripe herbs, coco and dark bitter chocolate profiles.  This wine has more tannin grip than vintages past and maintains that crisp acidity, necessary for cellaring a decade and also pairing with tonights dinner.
