Grower & Winemaker's Notes

There isn’t much Gewürztraminer around in the Russian River Valley these days, in fact much of it had been ripped out in the past 8-10 years making room for the arrival of Pinot Noir. This California Ice Wine is so very unique. We picked the '07 vintage of Dessert Gewurz off the Laguna Block in 40 pound grape lugs and took these small bins to a commercial freezer in nearby Cotati, where they sat for 9 days at -20° F. At 4:30 AM, we pulled them out and rushed the frozen whole clusters to the crush pad where the grapes went through a hard, quick press-off. After about two hours, the most complex and intense sugars began to sloooowly drip into our collection pan, while pure water remained in frozen state in the press. So out of the press oozed pure lovin’ which measured between 38 and 41 Brix! (very, very sweet). After some coaxing of the yeast, they finally began to ferment the sweet juice. The yeast fermented as far as they could until they fizzled out at a mere 11.0 % alcohol! We are proud to offer this wine as an accompaniment to dessert or as an aperitif. Serve Chilled.
